How to use left-over quinoa! Make pancakes!!!
1 Cup Oats (I used quick)
1 cup Cooked Quinoa (or 1/4 cup dry, cooked in 1/2 cup water. I used 3 Tbsp Quinoa and 1 Tbsp kaniwa
1 tsp baking Powder
1 Tbsp ground flax
1 1/4 cups milk (or milk substitute, I used almond milk)
dash of Vanilla
Pinch Sea Salt
Procedure: In a food processor or high speed blender, purée the oats, salt, and baking powder, until the oats begin to resemble a coarse flour. Empty the oat mixture into a bowl. In the same blender/ food processor, combine the cooked quinoa, ground flax, banana, milk, vanilla, and purée until the quinoa begins to break up and starts to form a batter. Add the oat mixture and pulse to combine. The batter will be rather thick, much like oatmeal. If at any-time the mixture seams too thick, add a touch more milk. Heat a heavy bottom pan to medium heat, and add a touch of oil. Spoon approximately 2 Tbsp of batter per pancake, using a spoon to spread it around. Be sure not to flip the pancakes too early, as if they are not fully cooked on the bottom, they will stick a bit to the pan. Serve with fruit and maple syrup.
